- 1 Milk Chocolate Ensure Original shake, 8 fl oz
- 1/3 cup oil
- 1 egg, beaten
- 1 package banana bread mix 14-15 oz
- 1/3 cup dark chocolate baking chips
Directions
Preheat oven to 375° F. Grease the bottom and sides of a 9x5 loaf pan (or 3 small 3x5 mini loaf pans) with nonstick spray or oil.
Combine banana bread mix, Ensure Original, oil, and egg. Using a spatula or hand mixer, vigorously stir batter until combined, about 2 minutes. Fold in chocolate chips. Pour batter into prepared pan(s).
Bake at 375° F for 45 to 55 minutes for a 9x5 pan or for 35 to 45 minutes for mini loaf pans. Remove from oven when a toothpick inserted in center comes out clean. Cool 20 minutes in pans. Loosen edges with knife or metal spatula and remove from pan.
